Sundried tomato chicken sausage with mushrooms and spinach over spaghetti & marinara


I used:
1 package (5 links) Garlic herb & Sun dried tomato chicken sausage (4.5 fat grams in 1 link)
1 cup frozen spinach
8 oz package of sliced baby bella mushrooms
1 small white onion diced
6-8 ounces thin spaghetti (or any pasta)
2 cups marinara

Boil pasta as directed

In a non stick skillet drizzle one tablespoon of extra virgin olive oil.

On medium heat add the diced onion and cook until translucent.

Add sausage and brown on all sides.

Add mushrooms and spinach and let cook for five minutes.

Add marinara (If you want to make sauce thinner add some of the hot pasta water)

Cover and lower heat. Let simmer for 15 minutes. (Slice into links to make sure they are cooked all the way through.
