Calamari with tomato & garlic puree over israeli couscous

This recipe is 2 adult servings

You will need

½ pound calamari (I used equal parts tentacles and tubes) slice tubes in thirds, it will shrink as it cooks

1 ¼ cup Israeli couscous

1 ¼ chicken broth

1 tablespoon olive oil

2-3 leaves fresh basil

¼ parmesan cheese

2 tablespoons capers

2 medium sized tomatoes roughly chopped (or one 15 ounce can diced tomatoes with roasted garlic)

1 large garlic clove (if not using canned)

In a sauce pot bring chicken broth to a boil and add couscous and cover immediately and simmer for 15 minutes on low or even turn heat off (add a drizzle of olive oil or a sliver of butter if fat content is not an issue, to keep pasta from sticking. Or a touch of cooking spray will work as well)

In a non stick skillet add one table spoon of olive oil and turn on to medium heat. Once pan is warm add the calamari let cook for 10-15 minutes

Add salt and pepper to taste (be sure to not over salt the parmesan cheese in the puree will provide salt flavor)

In a food processor (or blender works great) add diced tomatoes and garlic or can. Add ¼ cup parmesan cheese and pulse the tomatoes and garlic about 5 times, you want a thick but pourable consistency.

Pour puree to pan of calamari and let sauce and calamari warm through on low to medium heat, at this point add capers and taste and adding any seasonings to taste.

Add cooked couscous to mix stirring lightly. Let couscous and calamari warm pan entirely and plate. Add torn or chiffonade of basil on top and serve.

*Optional-I added a piece of white fish to this meal for my husband’s portion. Mostly any fish or shrimp pairs great with the tomato puree*

Sirloin topped with sweet onions, tomatoes & feta with a balsamic drizzle and yucca potato cakes

I used:
2-6ounce top sirloins
1/4 cup low fat feta
1/4 balsamic vinegar
1/2-3/4 cup fresh tomatoes (any kind will work even diced)
1 small-medium sliced sweet onion (red or white works fine too)
1/2 half frozen yucca (boiled for 10-15 minutes until fork tender)

Season steaks with salt, pepper, garlic & onion powder (or you favorite season)

In a non stick skillet with cooking spray and/or a drizzle of extra virgin olive oil on medium heat

Place steaks into pan and sear on both sides until golden crust forms then remove and set set aside.

Add more olive oil or cooking spray and add sliced onion..add a pinch of salt to get the caramelization going.
When onions start to become translucent add tomatoes and let simmer until the tomatoes start to soften.
At this point add steaks back to pan and cook until desired temperature.

Add balsamic vinegar and simmer for another 6-7 minutes until balsamic starts to thicken.

Remove from pan and add crumbled feta.

For yucca cakes:
Boil yucca until fork tender

Remove from water and place into food processor with a little bit of the hot water used for boiling.

Add salt, pepper, garlic, powder (or adobo)

Pulse until smooth (don't panic yucca is very starchy and it will look like sticky dough when you have reached the right consistency.

Transfer yucca to a bowl

In a small non stick skillet with non stick spray on medium heat
wet hands to keep form sticking and grab gold ball sized portions of yucca and form into patties

Place into pan and let brown on both sides and serve

Pan seared cashew crusted mahi with basil and tomato israeli couscous with black olives and feta

You will need:
2 mahi mahi steaks (or however may portions you need)
1/4 cup crushed salted cashews (no salt is fine too)
1 1/2 cups chicken broth
1 cup Israeli couscous (or regular)
olive oil or cooking spray
1/4 cup fresh basil leaves
1 plum tomato diced (i drain and discard the insides to eliminate wetness)
1/4 cup low fat sun dried tomato feta cheese (or any kind you like)
1/4 cup diced black olives

In a quart pot bring chicken broth to a boil and add couscous. Cook for 8 minutes and drain and set aside(both provides flavor to the couscous since there is no dressing -you can use water if you like and season couscous after.)

Pat mahi dry with paper towel and salt and pepper lightly (if using salted cashews be sure to go light with salt when seasoning.)

Add a drizzle of olive oil or cooking spray to mahi and rub onto both sides.

In a wide dish have crushed cashews ready and pat onto mahi. Not all of it will stick and will come off into pan as well, let the nuts cook in pan and place whatever falls off on top of fish when you plate to serve. If you want to dredge the mahi then coat fish with crushed nuts this is fine, it will just raise the fat content from using more nuts.

In a non stick pan on medium heat with one tablespoon of olive oil drizzled add fish carefully trying keep as much of the cashews in place as possible. Cook until the fish is white half way through then flip and cook on remaining side.
Have the extra 1/2 cup of chicken broth handy to add into pan when loose cashes start to cook in the bottom of the pan. The liquid will keep them from burning.

When fish is cooked through turn off heat and let cover to keep warm.

Drain cooked couscous.

Mix into couscous the chopped tomato, olives, feta and basil

Plate fish and add loose cashew bits back onto fish before serving.

Chicken involtini with herbed goat cheese & eggplant with parmesan quinoa

I used:
2 large chicken breasts pound out to about an inch thick (enough to roll)
2 Italian eggplants**One small for garnish and one large for slicing (you can use Japanese eggplant but you will have to trim it down)
1/4 crumbled goat cheese (=5 grams of fat)
3/4 cup tri colored quinoa (or any kind you like)
2-3 teaspoon grated parmesan cheese (to taste)
2 tablespoons fresh thyme chopped (dry works)
2 tablespoons fresh rosemary chopped (dry works)
2 tablespoons all purpose flour
1 1/2 cups chicken broth
6 toothpicks
salt and pepper

Preheat oven to 425

For quinoa:
Add 3/4 of a cup of quinoa with 1 1/2 cups of chicken broth, bring to a boil. once boiling turn heat to low, cover and let stand for 15 minutes stirring occasionally.
Once quinoa is cooked add parmesan cheese and fluff gently.

Slice the larger eggplant of the two in thin strips

In a non stick skillet drizzle 2 tablespoons of olive oil on medium heat place eggplant into pan and cook on both side about 3 minutes on each side until eggplant is soft.

Remove from pan and place onto paper towel to drain.

Mix diced herbs with goat cheese (you might want to place goat cheese into microwave for a few seconds to warm and make it easy to mix.
Spread herbed goat cheese mix onto chicken breasts.

Salt and pepper the pounded out chicken and place 3 pieces of eggplant length wise (so when you roll up chicken and slice the eggplant will show)

Roll up chicken and secure with toothpicks.

Lightly dust rolled chicken with flour on all sides and add a pinch of salt on top.
This will create a brown flavorful crust onto chicken.

Brown chicken all sides and remove from pan and place onto lightly sprayed baking pan.

Bake in oven for 10-12 minutes (depending on how thick your chicken breasts are).

Remove from oven and let cool for 15 minutes.

Slice and serve.

Shocktop chicken with ginger & orange longrain rice with broccoli-cauliflower medley

You will need:
2-4 chicken breast
1 shocktop beer (blue moon works too)
1 navel orange (juice and zest)
1 cup long grain wild rice (instant works fine)
1/2 cup all purpose flour
Salt and pepper
1/2 broccoli (frozen)
1/2 cauliflower (frozen)
1 teaspoon grated fresh ginger

Marinate chicken an hour or so before cooking.)(this is not critical but will add flavor)
Cover chicken in liquid so all breasts are submerged in beer. Save remainingg beer for cooking.

Zest the bottom of the orange so zest marks do not show

Slice three round wedges from top of orange and set aside
Scoop inside of orange out with spoon and save juice so you have a shell for rice to sit in.

In pot cook rice as directed. Once rice is near being cooked add in juice from orange, grated zest and ginger and cover to cook for a few minutes until juice is cooked into rice. Turn off heat and let stand.

Remove chicken from beer marinade and salt and pepper to taste.

Season flour with salt and pepper and pat light coat onto chicken breast on both sides. Do not dredge just pat lightly.

Add to heated pan with olive oil and let brown on both sides. When chicken is cooked add remainder of beer to pan, sand clear it will bubble and become foamy. Stir constantly until bubbles simmer away.

Add broccoli and cauliflower to pan

Turn heat down and let chicken simmer, flip after a few mintues to ensure beer flavor is on both side of each breast. Cover chicken and veggies until veggies come warm throughout.

Plate chicken with sliced oranges, rice and vegetable medley.

Steak & Fries~ London broil in a merlot sauce with cipollini onions & portabella mushrooms with baked sweet potato fries

1 pound-1 ½ London broil (I had the butcher break the package and cut the meat in half since there is just two of us, 1 ½ pound was about four servings )

3 sweet potatoes peeled and sliced (the thinner you slice then the faster they will cook and the crispier they will be as well)

2 large portabella mushroom caps (or small will work great too) wipe with a damp towel or cloth-don’t wash or run under water!

4-5 cipollini onions (or any sweet or white onion is fine)

¼ cup all purpose flour

Salt and Pepper

1 cup red wine

2 tablespoons olive oil

Cooking spray

1 garlic clove minced

Steak seasoning of your choice (I used Badia Sazon)

Pre heat oven to 425

Line a baking sheet with foil

Peel and slice sweet potato into thick wedges (or skinny if you refer) and toss in a bowl with one tablespoon olive oil(cooking spray works too) and steak seasoning and lay wedges onto pan and cook for 30 minutes rotate at 15 minutes.

After fried are cooked turn oven to broiler (I used low)

Season beef with steak season of your choice

In a bowl mix flour with salt, pepper and a little steak season and pat the seasoned flour lightly onto beef on all sides. This will form a crust on the outside of the beef.

Brush or spray with cooking spray the tops and bottoms of the mushrooms

In a non stick pan on medium heat add olive oil and then add onions and mushrooms cap side down…let cook until onions have a brown color..remove onions and mushrooms and set aside not to overcook.

To same pan add red wine and minced garlic let the wine come to a bubble add salt and pepper to taste (will vary depending on what type of wine you select)

With caution take the beef using tongs and begin to sear all the side of the beef in wine,( it will spatter a bit so be careful) you may have to keep adding wine for each side so have the bottle handy
Once all sides are brown move beef to broiling pan (slotted for juices to run out of the bottom).

Depending on how thick your beef is will depend on how close to place beef on rack to broiler. The beef package will have directions as well. My cut was thick(about 3 inches) so I put my broiler rack on the second highest shelf having the meat be 3-4 inches away from the broiler. Broil for 17-18 minutes with door open don’t forget! I rotated the beef a few times to ensure equal coloring on the outer edges. If you like you meat cooked medium well leave the beef in for a few minutes longer. * Don’t leave broiler unattended

Remove beef and let stand for 15 minutes so the juices can redistribute (if you slice the beef right away all the delicious juice will run out on your cutting board)

Slice into medallions or at an angle (serrated knife works well) and serve with mushrooms, onions and steak fries

Chicken thighs with goat cheese, tomatoes & fresh basil

You will need

1– 1.25 skinless chicken thighs
** Chicken breast can be used for this recipe as well**

1 pint of cherry tomatoes (can use canned if you don’t have fresh)

14 ounce can diced tomatoes (drained)-any kind will work, with garlic , onion, or chilies(or use a large can if omitting the fresh tomatoes)

¼ cup goat cheese (you can use more, I used 1.4 to keep the fat content down)

4-5 leaves fresh basil (tear or chiffonade )

1 small yellow onion diced

1 tablespoon olive oil

½ cup chicken broth

1 garlic clove (or one table spoon of minced garlic)

½ cup all purpose flour with one table spoon of season salt of choice

Have salt, pepper, or your favorite house season salt

Salt and pepper (or house season) the chicken thighs evenly

In a non stick pan add olive oil and also coat pan with cooking spray and turn on heat to medium, after pan is warm tip pan to coat evenly as possible with olive oil in pan.
Add onion and garlic and let cook until onions start to have a translucent color. Have chicken stock on hand if at any time the pan become dry add a splash of chicken broth

Dust chicken with a light coat of seasoned flour and place in pan. When brown crust starts to form flip thighs and brown on opposite side (add chicken stock to prevent thighs from sticking to the pan and this will add flavor to crust forming on outside of chicken)

Add can of tomatoes, and fresh cherry tomatoes to pan when on the first turn of chicken thighs, salt and pepper tomatoes to taste and let thighs brown

Cover pan and check every few minutes, when cherry tomatoes have burst turn down the heat to low and add goat cheese then put lid back on until cheese just starts to melt

Plate the chicken thighs then add fresh basil and serve

Break up meat but into too small of pieces to keep it chunky. Cook until the meat is browned.
Add cumin and chili powder and stir well but gently not break up the meat too much

Shrimp, scallops & Zucchini stuffed shells with a low fat ricotta and marinara sauce

This recipe makes 20 small/medium stuffed shells-

I used:

1 box Shells

½ cup Ricotta cheese (I use low fat /skim)

½ pound medium shrimp (use fresh or frozen or any size you want because you will be chopping them up anyway)

½ pound small scallops (again use whatever is on sale , fresh frozen-whatever you have)

1 small yellow onion

1 zucchini

1 jar marinara/spaghetti/tomato sauce

Store bought sprinkle parmesan cheese (or grated )or mozzarella if you prefer

Preheat oven to 350

Boil the shells for about 9-10 mins. –I take them out of the water a bit early to keep some firmness-they will finish cooking in the oven.

Dice yellow onion and zucchini in small pieces.

In a small sauté pan (non stick if you have it) toss in your scallops and shrimp for about 6-8 minutes. My shrimp were already cook from the store so I just cooked up the scallops.

Pull off the stove let cool a bit then chop into small piece (about the size of the onion and zucchini)

In a non stick sauté pan with one table spoon of olive oil(more if you desire) throw in onion and zucchini for about 10 mins. (Add salt and pepper to taste.)Cook until onion is translucent.

In a separate bowl have your ricotta cheese and add the onion and zucchini (you don’t have to let it cool, the warmness will melt the ricotta perfectly)

Add the cooked scallops and shrimp to ricotta, onions and zucchini…I added a little parmesan cheese for flavor as well.

In the bottom of a 13x9 (or whatever you have glass or metal baking pan, place a layer of tomato sauce on the bottom of the pan so shells won’t stick.

Scoop mixture (about a tablespoon) into the shells and line the shells in tight rows (4-5 will fit side by side).

Cover the shells with tomato sauce and sprinkle parmesan (or if you are not worried about fat/calories add mozzarella to your liking).

Bake shells for 20-25 minutes until warmed through (when you see it bubble in the dish-it’s probably warmed through perfectly!) If you choose to put mozzarella on the top you may want to cover the shells with foil to have it melt and bubble better. I didn’t use foil and it was fine, I prefer the noodles to get a little crispy on the edges for crunch..:)

Lean turkey bacon wrapped shrimp over sweet corn & tomato couscous with fresh torn basil

This recipe is for two so just add accordingly for more servings

You will need

¼ 31/35- medium shrimp (about 20 pieces)

1 tablespoon of olive oil (or a small sliver of butter)

2 cups of whole grain couscous

2 cups chicken broth (or water with soup base)

Pinch of all season (your choice)

1 large plum tomato diced

1 cup of corn (fresh, frozen or canned)

1 package of extra lean turkey bacon (I used Jennie-O)

20 toothpicks(or however many shrimp you have-this is optional)

Peel and shell the shrimp and season lightly with all season or salt and pepper. Don’t over season since the turkey bacon will provide a large portion flavor.

In a pot bring 2 cups of broth to a boil and add couscous then turn off heat immediately and cover for 15 minutes. After all liquid is absorbed add olive oil or butter to add moisture and prevent sticking. Then fluff couscous with a fork. Set aside.
* At this point if you’d like to save cleaning an additional pan you can add diced tomato and corn to couscous..

Take enough strips of bacon that’s equals half the number of shrimp. (example: I had 20 shrimp so I used 10 pieces of bacon). Cut bacon strips long ways right down the center.

Wrap each shrimp. I secured the bacon with toothpicks and removed before serving to assure they wouldn’t unravel.

On low medium heat place shrimp in a non stick pan coated with cooking spray. Let cook for about 5-10 minutes until shrimp is fully cooked and bacon is crispy. The last 5 minutes cover the shrimp to ensure they are cooked all the way through since the bacon wrap will keep center of shrimp from touching the pan.

In a small non stick pan (if you did not add corn and tomato to couscous) on medium heat with a coat of cooking spray or dribble of olive oil warm tomato and corn in pan then add to couscous. I chose to cook in the pan to get a little crisp for extra flavor).
